How to Make Delicious Homemade Cheese with Common Kitchen Ingredients

Cheese lovers, rejoice! Making your own cheese at home is much easier than you think, and the results are simply delicious. In this recipe, we'll guide you through the steps to make creamy and tangy homemade cheese using simple ingredients you likely already have in your kitchen.

Ingredients:

  • 2 liters of whole pasteurized cow or buffalo milk (with 3.5% fat)
  • Juice of 2-3 lemons or vinegar
  • 1 tablespoon of sodium citrate (a magic ingredient that helps emulsify the cheese)
  • 1 tablespoon of baking soda
  • Water
  • 1/4 cup (50g) salted butter
  • Salt to taste

Equipment:

  • Large pot
  • Thermometer
  • Strainer or colander
  • Cheese cloth
  • Blender or food processor
  • Buttered container for storing the cheese
  • Heat-resistant bowl

Instructions:

  1. Heat the milk in a large pot over low heat, stirring constantly until it becomes lukewarm. Use a thermometer to check the temperature and make sure it reaches 45-50°C.

  2. Turn off the heat and gradually add the lemon juice or vinegar to the milk while stirring continuously. Keep adding the juice until the milk starts to curdle and you see the cheese forming.

  3. Cover the pot and let it rest for 2-3 minutes. Then, gently collect the curds using a strainer or colander, and separate them from the whey.

  4. Mix the sodium citrate, baking soda, and water in a separate bowl until they dissolve completely. The resulting solution will help emulsify the cheese and give it a smoother texture.

  5. Put the curds in a blender or food processor along with the salted butter and the sodium citrate solution. Blend for 4-5 times, pausing in between, until the mixture becomes smooth and creamy.

  6. Transfer the cheese mixture to a heat-resistant bowl, and cook it in a double boiler for 10-15 minutes while stirring continuously. The cheese will become creamier and smoother in texture.

  7. Pour the cheese into a buttered container, cover it with plastic wrap, and refrigerate it for a few hours until it's firm.

Your homemade cheese is ready to be enjoyed. Serve it with crackers, bread, or add it to your favorite dishes. You can also experiment with different herbs and spices to add more flavor to your cheese.
