Soak and Cook the Chickpeas
- Start by soaking 1/2 kg of chickpeas in water with 1 tsp of baking soda for at least 12 hours.
- Drain the water from the chickpeas and add them to a pressure cooker with enough water to cover them, along with 1 tsp of salt.
- Cook the chickpeas in the pressure cooker until they are soft and tender, approximately 5 minutes.
Prepare the Spice Mixture
- In a separate saucepan, heat 1 cup of oil and add 1/2 tbsp of garlic paste and 1/2 tbsp of ginger paste.
- Once the garlic and ginger have cooked for a bit, add 1 crushed onion and cook until it changes color and the water has dried out.
- Add the following spices: 1 tsp salt, 1 tsp red chili powder, 1 tsp chili flakes, 1 tsp turmeric powder, and 1 tsp black pepper powder. Fry the spices until they are well combined and aromatic.
- Add a small boiled potato and 1/2 cup of boiled chickpeas to a blender with a little water and blend until smooth. Add this paste to the spice mixture and fry for a few minutes.
- Next, add whole spices, including 3 cinnamon sticks and 3 broken black cardamom pods. Cook for 2-3 minutes, stirring frequently, and add a little water if necessary.
- Add 1 tsp cumin seed powder, 1 tbsp coriander powder, 1 tsp garam masala powder, 1 tsp chicken powder, and 1 tsp mango powder (optional) to the spice mixture and stir well.
Cook and Serve the Chickpeas
- Add the boiled chickpeas to the spice mixture and stir well.
- Add 1/2 cup of yogurt and continue cooking until the oil separates from the spices.
- Add 3 cups of the water that was taken out of the chickpeas and cook for an additional 10 minutes.
- Finally, add 1 tsp Kasoori methi, 3 finely chopped green chilies, and a little finely chopped green coriander. Cook for 3 minutes over low heat until the oil separates.
- Dish out the delicious Chikar Chickpeas and serve with rice or naan bread.
