Ingredients:
- 1/4 cup oil
- 1 cup fine chopped potatoes
- 1 cup onion
- 1 cup cabbage (optional)
- 1/2 tsp salt
- 3 eggs
- 1/2 tsp pepper powder
- Coriander and mint leaves
- 1/2 cup mozzarella cheese (optional)
- Sauce for serving
Instructions:
Preparing the VegetablesHeat up a pan and pour in 1/4 cup of oil. When the oil is hot, add 1 cup of finely chopped potatoes and fry for 2-3 minutes over medium heat, stirring regularly until the potatoes become slightly soft. Next, add 1 cup of onions and continue to fry for another 2-3 minutes. If you like, you can also add 1 cup of cabbage to the mix. Sprinkle in 1/2 tsp of salt and stir everything together. Finally, cover the pan and let the vegetables cook for 7-8 minutes over low heat until they are soft.
Whisking the EggsWhile the vegetables are cooking, whisk together 3 eggs, 1/2 tsp of pepper powder, and a handful of coriander and mint leaves in a bowl until the mixture becomes fluffy.
Mixing the OmeletteOnce the vegetables are cooked, take them off the heat and put them in a separate dish. Add the vegetables to the egg mixture and mix everything together. If you're using mozzarella cheese, add 1/2 cup of cheese to the mixture and stir.
